This super-easy highball is great with Fever Tree tonic, though feel free to substitute your tonic of choice.

Note:To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.

  • 4ouncesPimm's No. 1

  • 2ouncesfreshly squeezed lemon juicefrom about 2 lemons

  • 1/2ouncesimple syrup

  • Fever Tree tonic, chilled

Directions

  1. Add Pimm's, lemon, and simple syrup to a cocktail shaker and fill with ice. Shake until well chilled, about 15 seconds. Strain, dividing evenly between two Collins glasses filled with ice. Top with tonic, stir gently, and serve.
