For the Chicken:
2 bone-in, skin-on chicken breasts (or2cupsshredded cooked chicken)
1tablespoonpeanut oil
Kosher saltand pepper
For the Dressing:
1/3cupunseasoned rice vinegar
1/4cupsoy sauce
3 1/2tablespoonshoney
1/4cupsesame oil
1/3cuppeanut oil
3mediumcloves garlic, peeled and roughly chopped (about 1 tablespoon)
1 1/2-inchsquare piecefresh ginger, peeled and roughly chopped
For the Salad:
4 to 5romaine lettucehearts, chopped
1red bellpepper, thinly sliced
2scallions, white and green parts, thinly sliced
1/2cupgrated carrots, from 2 carrots
1/4cupchopped fresh cilantro
1/3cupsalted cashewsor peanuts
Directions
Adjust oven rack to center position and preheat the oven to 350°F. Place the chicken breasts on a foil lined sheet pan. Rub the skin with 1 tablespoon oil and sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked and juices run clear. Set aside until cool enough to handle.
